Only a few winemakers in the famous high-class Barolo area know how to deal with their vineyards as Marco Parusso. Behind every grape variety, from the fruity Dolcetto to the noble Nebbiolo, he sets a sensual exclamation point. Expressive and provocative - these are Parusso wines! Marco, the perfectionist, can now draw on a total of 18 different parcels between Castiglione Falletto and Monforte d'Alba, his total of 23 hectares of vineyards in prime locations and sought-after soil conditions are his pride and joy. Despite rapid initial successes (already in the mid-90s 3 glasses in the Gambero Rosso, nominations Robert Parker and top scores in Winespectator) wanted the winemaker in the fourth generation more. Often Marco Parusso traveled to Burgundy, where he hoped to fathom the suppleness of Pinot Noir. He sought the same deep elegance for his Barolo, but only with the power of Nebbiolo from his Grand Cru location Bussia. His sister Tiziana supported him in the decisive radical change: Together they tore down the old winery and in 2002 they were able to commission their new winery according to the latest findings and state of the art technology. "It's like a modern operating room. When the grapes arrive, what's needed can be done right away, "says Marco Parusso. And this according to his special method. So he cools his hand-picked grapes first in the basement and leaves it resting for two days before pressing - according to his observation, the grapes then give off more color and extract. At the same time, he decided that in the future all his wines would ripen on the mother yeast. With this step, Marco Parusso entered uncharted territory in Piedmont. This type of vinification is known in Champagne, but as a method used in Piedmontese red wines, it is absolutely unusual. When the wines are transferred to new oak barrels (Marco: "Breathing barrels!") After alcoholic fermentation, Parusso uses its own yeast from the first fermentation, where it remains with the wine for another 2 years. Yeast is a bacterium and the longer the wine stays in contact with its mother yeast, the more it lives. Optimized at the same time was the top product of the winery, the Barolo "Bussia". Until then, the Bussia stocks called "Rocche", "Fiurin" and "Vigna Munie" were each separately expanded as three wines. Since the year 2001 she presents Marco Parusso as an incredibly dense layered Barolo. It is his masterpiece and his declaration of love to Piedmont, his homeland.
