The Amarone Scarnocchio comes from grapes from the very old vineyard of the same name near Fumane. The harvest takes place at the end of October, so that the grapes are partially dried on the vine, the further drying process then until the end of January / beginning of March in special drying rooms. After that, the grapes are ground and undergo slow fermentation. After pressing, 90% of the young wine is aged in oak barrels of 3,000 liters for 24 months, the remaining 10% in barriques.
