The Novecento is reminiscent of 1919, when Contratto produced the first bottle-fermented sparkling wine with vintage in Italy. This was just as popular with numerous European royal families as it was in the Vatican. The grapes for the Novecento come from Piedmont, near Loazzolo, from 30-year-old vines. After fermentation in the bottle, the Novecento matures on the yeast for about seven years before it is disgorged. It does not receive any dosage (pas dosé) and is therefore completely free of residual sugar.
