When the first order for the Pas Dose came from England in 1867, it was so honored that this sparkling wine, which is produced using the bottle fermentation process, was simply called “For England”. The Blanc de Noir is made exclusively from the red grape variety Pinot Noir (Spätburgunder), which comes from the Oltrepo Pavese area. The Blanc de Noir is stored on the yeast for 36 months and remains after disgorging without dosage (addition of sugar).
