After a light pressing, the fresh must spends 48 hours on the mash and is fermented for 15 days. Sparkling wine fermentation takes place for 30 days using the Charmat / Martinotti method. The wine proves to be an ideal accompaniment to food, as it appears very fruity, fine and playful on the palate.
