In the past, the grapes for this noble wine had to be delivered to the noble lords. For her prestige wine, Caterina Dei uses the grapes from the Martiena single vineyard. The youthful hardness of the Prugnolo Gentile is countered with a well-dosed portion of the violet-scented Mammolo grape. The wine is aged for 24 months in medium-sized Slavonian oak barrels to preserve the fresh Sangiovese fruit.
